This dynamic winegrower, winemaker, businesswoman, director and founder of Bodegas Cuevas Jiménez, where she has managed to produce and position great wines that today more than ever bear her personal stamp. Ferratus AØ 2018

María Luisa projects her knowledge and ideas in the team she has formed, with French winemaker Emmanuel Ivars as a key player. An entrepreneur at heart, she has passionately devoted herself to winemaking and leads a winery that has managed to be energetically sustainable through its commitment to renewable energy.

Ferratus AØ (read “A-zero”) is one of her creations, a wine that has it all. Made entirely from hand-harvested Tempranillo, its malolactic fermentation in oak barrels and 12 months of aging until it reaches its optimum level of roundness make it special, offering fresh fruit sensations perfectly combined with the wood.

It presents an intense cherry red color with violet edges, high layer, clean and very bright; it stands out for its aromas of blueberries and blackberries, but also complex nuances from the wood: black pepper, clove, cedar, tobacco, chocolate and violet caramel.

The palate is dense, fruity, with good oak, very balanced acidity, friendly and easy to drink. This is a substantial red wine, with a contemporary style and avant-garde profile, which has also refined its image, with a brighter, white label with elegant steely reflections, on which the name and the main data of the wine are marked in black and red.

A modern image for a modern wine, which has always stood out above its immediate competitors for its unbeatable value for money: a wine destined to be a trend-setter.

Ideal pairings or harmonies for Ferratus AØ

– Flavored stews and mixtures with paprika or paprika (sweet, spicy or smoked).

– Soups or spoon dishes: garlic soups, beans, chorizos, sausages.

– Pasta, rice, risottos, and more complex stews such as saffron risotto with luganighe sausage (Switzerland). And potatoes… such as potato omelette or Swiss rösti.

– Young animals: suckling lamb, suckling pig, veal either roasted or stewed. Barbecued ribs, hamburgers (spicy or barbecue sauces). Curry sauces, tandoori chicken.

– Fatty pink and/or salmon fish, red beets, chipotle, mushrooms, puddings.

– Chocolates at 50% and sauces containing chocolate or cocoa.

– Cheeses with little maturation, but with flavor: raclettes, fondues, malakoff (cheese fritters).
